Vegetarian Wednesday

I love to read. It is one of the activities that Scott and I enjoy most together. We pass books on to one another and you will often find us around the house reading. Of course I do not have the time to read like I once did due to a little being crawling around by the name of Liam =).

Recently I came up with the idea of getting books on CD from the Library so I could keep up on books that I wanted to "read" while working in the kitchen. I just finished Eating Animals by Jonathan Safran Foer. It horrified me, in a good way. I am so far removed from where my food comes from, particularly my meat. I am now convinced that there is something seriously wrong with the whole factory farm industry. Now let me say first and foremost, I do not think it is wrong to eat animals, but animals that have been so genetically altered that they cannot even reproduce or carry out the normal basic functions that animals should be able to? But mostly it is the motivation behind the whole meat industry that bothers me, the love of money. I could honestly go on and on, but it boils down to this, I am very disturbed, I do not have the money nor the space to raise and slaughter my own animals so what do I do?

I am starting out small, but after talking to Scott we decided to have vegetarian Wednesday =). So yesterday we hit the kitchen together and made avocado enchiladas, they were great! It was a lot of fun and I really enjoyed being in the kitchen together and best of all eating =)

Being Home

I was so looking forward to being home and jumping back into my “normal routine”, sleeping in my own bed, cooking meals, and cleaning house.


Unfortunately, that was not exactly what was in store for me. Liam got sick and as I took care of him, my proud mind thought, “I won’t get this, I NEVER get sick”. BAMB….I was out for two days, two days of Kleenex (vicks Kleenex at that, it’s wonderful!) Earl Grey and every BBC movie that Netflix streaming carries. I watched so many Jane Austen“ish” movies that I kept swirling around the house (in my mind it was an English manor) looking out the great windows for my knight to ride up on his great horse and rescue me (that would be Scott in his red Acura).


All joking aside, the last time Liam was sick I noticed some areas in my life that needed major work, I turn into Monster Mamma when he is sick. I drop everything for him; I am continually worried and second guessing myself. Scott’s lunches do not get packed nor his shirts ironed. Our home immediately becomes child centered, I forget about my duties to my husband, and more importantly to my Lord. Much to my dismay, it wasn’t much different this time around.

Reflecting on this makes me pray harder that I would be able to withstand the trials that the Lord has for me. I am so weak when Liam is sick and that is a very minor trial compared to what many believers go through. But praise God that we have a risen Saviour (like my English spelling?) and there is a reason for all these things…

While being back in my home has not exactly lived up to my expectations and plans, I can confidently know that one day I will be in my Eternal home and it will exceed any expectations I have =)

Trip to Little Rock/Scott's Birthday/Easter

We had a wonderful trip to little Rock, it went fast but we had some great family time! The weather was terrific!

Scott's Birthday!

For Scott's birthday we ate African Chicken and then went and walked the "big dam bridge" it is the biggest pedestrian bridge in the US. It is two miles and it was the perfect warm night.

This was the best present Liam could have given Scott, he loves it when Liam falls asleep on his shoulder. =)

Little Rock Zoo!

Good Friday we went to Cracker Barrel for breakfast and then walked around the zoo. I have never seen Liam eat so much as I did at Cracker Barrel, he was shoving biscuits, scrambled egg, and hash brown casserole into his mouth at breakneck speed! He is a boy after my own heart, he loves Cracker Barrel.

EASTER...

Coloring eggs is a huge tradition in our family. When I first brought Scott home to meet my parents it was Easter and he claimed that the egg dye burned his fingers. It is a family joke that comes up every year. We did Monster eggs this year.

I experimented with Martha Stewart's idea this year....came out very Jamaican. It's the lucky egg from Cool Runnings.
